Snake Charmer, E.J. Wills Gastropub Cocktails

“Dangerous and mysterious, this cocktail combines Jose Cuervo Gold, Cointreau, orange juice, lime and muddled jalapeño to create a spicy concoction, with a hint of orange forward sweetness. Nosh on the whole jalapeño garnish to kick up the spice.”

E.J. Wills: A Gastropub

“In keeping with the neighborhood feel, Greg and his wife Joy, have decorated the interior with items that they have picked up along the way. There is no cookie cutter feel here; it is very homey and inviting. The bar is also stocked with liquor that has been requested by their regulars and the draft beer is all local as well.”

This North Dallas 'Garbage Burger' is Topped with Mac and Cheese and Candied Bacon

"So, what's on the Garbage Burger? One grilled patty (a house-ground prime ground brisket, short rib and choice chuck blend) is pornographically sandwiched with Jack cheese, sliced turkey, jalapeno-candied bacon, mac and cheese, and a house cheddar cheese sauce. There's lettuce in there somewhere, too."

"Words truly can not express how Amazing Joy, Greg and Staff are at E.J. Wills! Every year my company has an annual Christmas toy drive for local families that are going through some hardships. Well, this year was different! I found out that E.J. Wills allow guest bartenders to come in and work a few hours to earn tips for a charity of their choosing. I immediately contacted Joy to get on the schedule for the month of Dec. In just a short period of time, I was able to raise $650 that night!! This year we were able to help 9 Families with more than just toys, we were able to provide Walmart gift cards to them as well. I am SO grateful for the opportunity to have been a guest bartender. I know All the families we helped were grateful as well. E.J. Wills is more than a great restaurant with great food and entertainment. They honestly care about the community they serve to.”

David V. Garcia Jr., Founder/CEO, Boomerang Strategies

"E.J. Wills has been an official game watching location for the Texas Tech Alumni, Collin County Chapter for the past two seasons and they truly know how to make a Red Raider feel welcome! With plenty of TV’s and game sound, Texas Tech fans always have a great seat. Their menu is so diverse with a wonderful selection of chef inspired food. There are always options for our group, no matter their age or food preference.  Greg & Joy have been so great to work with, always quick to respond and eager to host additional events.  We could not be more pleased with their support and happy to call them honorary Red Raiders.  Thank you E.J.Wills for making our game watching parties such a success, GUNS UP!"

“The E.J. Wills Gastropub is one of the finest places in McKinney to eat and join with friends for a great time on a Friday night!  Greg and Joy Booth, owners of the E.J. Wills Gastropub really care about the homeless in our community.  They held a Give Back Night for the Bella House, maternity Home for pregnant homeless women, just before Christmas.  The E.J. Wills Gastropub adopted the Bella House as their charity for Christmas.  They also adopted the Bella House in the two years prior to this while they were located on Preston Road in North Dallas.  The large donation bin attracted supplies for the Bella House.  The mothers appreciate the support from the community.

The supporters of the Bella House were able to share a magical Friday night out together with music, adult beverages and an ugly sweater contest.  Clearly, the delicious meals were a draw for everyone and the music and drink specials were a bonus.  The E.J. Wills Gastropub pledged 15% of all the sales to provide much needed funds for the Bella House in the N. Dallas area.

There was an angel tree set up in a prominent location (it shared the stage!!) to provide gifts for the mothers and babies.  The Bella House received every size of diapers needed for babies, gift cards and personal gifts for Christmas.  Who would have thought you could go out for an adult beverage, the best food in town and join your friends in “giving back” in the very act of having a fun evening out!”

Mary Reddan, Board Member, Bella House

"Our daughter was married last May and we were having a really hard time coordinating a rehearsal dinner that would accommodate the schedules of not only our out of town family and friends, but also the wedding party.  We had already been to EJ Wills a few times and always loved the food and service, so we decided to reach out to Joy (owner)  and see if we could make something work.  She was extremely understanding, even when I was very undecided about times/dates/number of guests, and was instrumental in helping us put together a GREAT time with family and friends.  The food (as always) was amazing, and the service was above and beyond.  We are so thankful to have such a wonderful go-to option in our neighborhood!"
